The new Chardonnay Reserve is the first alcohol-free wine made from 100% Chardonnay sourced from one of France’s most prestigious wine regions and produced using BOLLE’s patent-pending twice-fermented process.
The wine begins as an AOP-certified Chardonnay from Burgundy, which is carefully de-alcoholised before being re-fermented with fresh Chardonnay juice from the same region, harvested to BOLLE’s exact specifications.

At BOLLE, premium vineyards are meticulously selected to craft their wines. The Chardonnay originates from La Mancha, Spain, a region recognized for its distinct expression of international varieties. The vineyards, rich in history, have been cared for by a family for over 120 years, committed to tradition and sustainable practices. Each grape is handpicked to ensure the highest quality.
Once the wine reaches the BOLLE facility, it undergoes a meticulous de-alcoholization process using the most advanced technology available, but even the best technology removes some character from the wine. That’s why BOLLE, the only provider in the world to do so, introduces a second fermentation.
They then add fresh grape juice and yeast, initiating a second fermentation that elevates the wine to new heights. This innovative approach captures the purest expression of the grape and the terroir, delivering a wine that is bright, crisp, and elegantly balanced.
